The structure of lipids is condensed which leads to increased provision of energy ( 9 kcal/gram) Lipids should make up 20-35% of the diet (based on a 2000 calorie diet for the average person). Sadly many North American diets exceed the recommended maximum of 35% of caloric intake (based on 2000 calories per day)
