Phospholipids are molecules that contain glycerol + fatty acid + phosphorous + a nitrogen base which makes the molecules fat and water soluble. This allows phospholipids to help transport fats in our bloodstream and across cell membranes. The ability also makes phospholipids emulsifiers which keep fats dispersed in water. Lecithin is the most widely distributed phospholipid in all cells. The body produces its own phospholipids so they do not need to be part of dietary intake.
